This was more of an Eggplant experiment turned into a what’s on hand Ratatouille.\u00a0 Many Eggplant recipes require that you Salt and drain the Eggplant for an hour before cooking.\u00a0 Salt is supposed to pull out the bitter flavors sometimes found in Eggplants —\u00a0But I don’t want to do that.\u00a0 Call me impatient, plus the process makes the Eggplant\u00a0seem unappealing to me afterwards, so I never do it.<\/p>\n

Here I conducted an experiment.\u00a0\u00a0I cubed an Eggplant and saut\u00e9<\/span>ed half in a little Olive Oil and Salt over the stove, and baked the other half with some Olive Oil and Salt in the oven.\u00a0 Since\u00a0Eggplant absorbs\u00a0oil like a sponge, I add more as needed while trying not to add too much.<\/p>\n

<\/a>\"\"<\/a>\"\"<\/a>\"\"<\/a><\/p>\n

Overall, I thought the texture of the baked Eggplant was more desirable than the saut\u00e9<\/span>ed\u00a0Eggplant.\u00a0 The baked\u00a0Eggplant is pictured above being added\u00a0to the Sauce.\u00a0 I thought the stove cooked Eggplant was a little tough and less flavorful.\u00a0 None were bitter.\u00a0 I enjoyed eating the baked Eggplant straight from the oven, but the other wasn’t as enjoyable.<\/p>\n

I added\u00a0both Eggplant batches to saut\u00e9<\/span>ed Sweet Onion, lots of minced Garlic,\u00a0chopped Tomatoes and served all over Angel Hair Pasta with a little Shaved Parmesan.\u00a0 I would have been satisfied if I had just baked the Eggplant, ate it from the oven and skipped everything else.<\/p>\n
