This Kiwi wannabe is burstin’ at the seams with excitement over\u00a0ZESPRI\u2019s<\/a> Kiwi A-Go-Go Bloggers\u2019 Contest<\/a><\/strong>.\u00a0 The possibility of winning a\u00a0Trip for 4 to New Zealand<\/a> put me over the edge.\u00a0 Inspired by the true stars of the contest\u00a0(Kiwi<\/strong> and New Zealand<\/strong>) and<\/span> by the love of board games and goofy interaction, I created a variation of an old\u00a0classic game — The new sensation is called\u00a0The Kiwi Game<\/strong>.\u00a0 It’s a FREE Game that comes with every 2 Kiwis and is\u00a0shown in our very first\u00a0VIDEO<\/strong> (posted directly below).\u00a0 It\u00a0was\u00a0fun making it!<\/p>\n

In celebration of the Kiwi and\u00a0to satisfy our\u00a0longing to visit\u00a0New Zealand<\/a>, we created the pictured Kiwi Blackberry Shortcake with Whipped Cream and Toasted Coconut<\/strong>.\u00a0 It’s a beautiful combination of flavors and colors\u00a0reminiscent of a\u00a0coral reef.\u00a0 We’ve provided the recipe and step-by-step photo instructions\u00a0(below) l – r working on downward.<\/p>\n

Kiwi Blackberry Shortcake RECIPE<\/strong><\/p>\n

Ingredients<\/span>:
\n2 Cups\u00a0Flour
\n1\/2 Cup\u00a0granulated Sugar (divided)
\n1 Tablespoon\u00a0Baking Powder
\n8 Tablespoons\u00a0softened Butter (1 stick)
\n3\/4 Cup Milk
\n1\/4 Teaspoon\u00a0Salt
\n1 Cup shredded, toasted Coconut (toast in dry skillet until golden brown)<\/p>\n

2 Cups\u00a0peeled and quartered Kiwi (approx. 4)
\n1 1\/2 Cups\u00a0whole Blackberries<\/p>\n

1 Cup Heavy Cream
\n3 Tablespoons Confectioners’ Sugar
\n1\/2 Teaspoon Vanilla Extract<\/p>\n

Instructions<\/span>:
\nPreheat oven to 450\u00b0 and grease an 8-inch square pan.\u00a0 Sift together the Flour, a little more than 1\/2 the Sugar, Baking Powder and Salt.\u00a0 Stir in the softened Butter and Milk just until blended.\u00a0 Batter will be a little lumpy.\u00a0 Bake for 13 – 15 minutes.\u00a0 While baking, whip the Heavy Cream until almost stiff, then add the Confectioners’ Sugar and Vanilla.\u00a0 When stiff peaks are formed, place the Whipped Cream in the fridge until ready to use.\u00a0 Peel and chop Kiwis into slices then quarters, combine with Blackberries and sprinkle all with remaining granulated Sugar, toss lightly so not to blend the vibrant colors and set aside.<\/p>\n

Once Shortcake has cooled, cut a square or rectangle piece and cut in half lengthwise.\u00a0 Place bottom half on plate and top with Whipped Cream and Kiwi Blackberry mixture, then top with the Shortcake cap, more Whipped Cream and toasted Coconut.\u00a0 Garnish with a sprig of Mint (optional), Kiwi slice\u00a0or Blackberry.<\/p>\n

Prep Time: 20 Minutes — Makes: 9 – 12 Servings.<\/p>\n

Note<\/span>:\u00a0 Since you don’t need to over mix the dough or the fruit combo, this\u00a0recipe is\u00a0easy and fast to make.\u00a0 It’s impressive looking and tasting too.<\/p>\n
