When cooked, there’s a hidden Spinach surprise\u00a0beneath each Egg.\u00a0 This recipe was inspired by one prepared by Chef Jamie Gwen<\/a>\u00a0and my love of Eggs Florentine\u00a0as an alternate to Eggs Benedict, another breakfast favorite —\u00a0I combined aspects of\u00a0each, along with\u00a0Nature’s Pride<\/a> 100% Wheat Bread to create the best marriage of all.\u00a0 I’m calling this one Florentine Surprise Eggs & Toast<\/strong>.\u00a0 They’re easy to\u00a0make\u00a0and produce a remarkable presentation of flavor.<\/p>\n

\"\"<\/a>\"\"<\/a>\"\"<\/a>\"\"<\/a><\/p>\n

This recipe was fashioned for potential Bread Ambassadorship<\/a> <\/strong>to be bestowed by Nature’s Pride, an official\u00a0Sponsor of the Foodbuzz Blogger Festival<\/a> in San Francisco\u00a0this November.\u00a0 It would be a tremendous honor to be one of\u00a0the chosen six — I’ll stress later about demoing it at the Pavilion, if selected.\u00a0 Can I get a volunteer to dice the Onions and crack the Eggs? \ud83d\ude42<\/p>\n

\"\"<\/a>\"\"<\/a>\"\"<\/a>\"\"<\/a><\/p>\n

As shown in\u00a0photos\u00a0(l – r) downward, I used Nature’s Pride 100% Whole Wheat Bread, and to be honest I’m not a big Wheat Bread gal, but do enjoy the\u00a0double-wrapped freshness, texture\u00a0and taste of Nature’s Pride Breads in general.\u00a0 In my experience, the one’s I’ve tried have been exceptional — I’m happy to report.\u00a0 This recipe was developed with it as the base.<\/p>\n

\"\"<\/a><\/p>\n

The Florentine Surprise Eggs & Toast<\/strong>\u00a0does\u00a0rest on the “Toast”\u00a0— First cut the Bread slices into rounds with a well-sized Cookie or Biscuit cutter, then toast\u00a0them\u00a0(light – medium) in the oven or toaster oven.\u00a0 Both\u00a0work well if\u00a0you don’t burn ’em.\u00a0 No neglect can happen.<\/p>\n

<\/a>\"\"<\/a>\"\"<\/a>\"\"<\/a><\/a><\/a>\"\"<\/a><\/p>\n

Florentine Surprise Eggs & Toast
\nRecipe Ingredients, Instructions\u00a0& Tips:<\/strong><\/p>\n

* Nature’s Pride 100% Wheat Bread\u00a0 * Baby Spinach\u00a0 * Eggs\u00a0 * Sweet Onion\u00a0
\n*Deli Ham\u00a0Slices\u00a0 * Lemon Zest\u00a0 * Green Onions\u00a0 * Olive Oil\u00a0 *\u00a0Cooking Spray<\/p>\n

Dice and caramelize Onions until golden brown, then stuff the same large pot with\u00a0washed fresh Spinach.\u00a0\u00a0Cook down the Spinach*<\/strong> and all\u00a0liquid, stir in the Lemon Zest**<\/strong> and\u00a0set\u00a0mixture\u00a0aside to drain.\u00a0 Spray\u00a0Cupcake\/Muffin pans with preferred Cooking Spray and place one\u00a0Toast round in each cup, then\u00a0arrange\u00a0the Ham***<\/strong> slices formed into a cup over each Toast.\u00a0\u00a0Add a portion of the drained Spinach mixture on top of the\u00a0the Ham, crack an Egg over each, season with Salt and freshly ground Pepper, and then bake all in a preheated oven at 375\u00b0 for 15 minutes.\u00a0 Remove\u00a0and transfer\u00a0to a serving platter and\/or awaiting plates and garnish with\u00a0Green Onions.<\/p>\n

*<\/strong> The amount of Spinach<\/strong> to use is sometimes hard to estimate.\u00a0 For six Florentine Surprise Eggs & Toast<\/strong>\u00a0I used about\u00a06 –\u00a07 cups of fresh Spinach.\u00a0 Add approximately (2) tablespoons of the cooked Florentine mixture to each cup being sure to leave enough room for the Egg.\u00a0 As a test, I also prepared one Florentine combo (pictured above)\u00a0with\u00a0uncooked cut Spinach and Lemon Zest and it didn’t turn out nearly as flavorful, thus it’s not<\/span> recommended.\u00a0 I’m always looking for a good tasting shortcut.<\/p>\n

** <\/strong>Stir in\u00a01\/2 teaspoon of Lemon Zest <\/strong>after\u00a0cooking the Spinach mixture.\u00a0 Its addition\u00a0is meant to bring in the essence of a Hollandaise Sauce, which is usually included with Eggs Florentine and Benedict.<\/p>\n

***<\/strong> Ask your Deli Guy\/Gal to slice their\u00a0finest Ham <\/strong>into\u00a0medium thick slices (not too thick).\u00a0 The pictured Ham slices were a bit too thin.\u00a0 It’s best to use thicker slices, so the Egg doesn’t leak through.\u00a0 If it does leak\u00a0a little, it’s\u00a0not the end of the world.\u00a0 And believe it or not,\u00a0the Toast base does adhere to the Ham top for easy removal from the pan.<\/p>\n
