Although no voting takes place here, you’re cordially invited to peek at my who cares anymore dinner party<\/em>, a blog post formerly known as the Challenge #3 Luxury Dinner Party in Project Food Blog<\/a>.\u00a0 I’m kidding (kinda), I care.\u00a0 And we did have a nice party, after I drank away my sorrow, just kidding again (mostly kinda).\u00a0 The links will provide more information about all that.\u00a0 We’ll continue with the party —\u00a0I prepared a few Thai dishes, since I’m familiar with the cuisine and dinner guests\u00a0were not.<\/p>\n

\"\"<\/a>\"\"<\/a>\"\"<\/a>\"\"<\/a><\/p>\n

I invited my awesome family<\/a>\u00a0to partake in the food and since none were familiar with\u00a0Thai food, this post is really titled Thai One Over On The Family<\/strong>, instead of who cares<\/em>. \ud83d\ude42 I know they do.\u00a0 They’re generally Steak, Seafood and Potato people.\u00a0 The Potato People —\u00a0Sounds scary.\u00a0\u00a0Anyway, they were game to try it all.\u00a0 I didn’t tell them about\u00a0the Fish Sauce, but\u00a0used it sparingly just in case.\u00a0\u00a0Busted —\u00a0They know now.<\/p>\n

\"\"<\/a><\/p>\n

Since this post is no longer in competition and other stuff needs to get done, it’ll mostly consist of photos,\u00a0a few words and relevant links.\u00a0 Hover your cursor over each photo to\u00a0learn a little more.\u00a0\u00a0We had a great time together, as always.\u00a0 I appreciate them so much.<\/p>\n

Grilling Chicken and Filet Mignon Satay<\/strong> in the backyard on a beautiful day, with the\u00a0Coconut Peanut Sauce<\/strong> waiting on the sidelines.<\/p>\n

They take just minutes to cook, so turn them over quickly, take ’em off the grill and dig in.\u00a0 The Satay\u00a0was the family favorite, as\u00a0expected.<\/p>\n

\"\"<\/a><\/p>\n

They’re finally ready to dip into the Coconut Peanut Sauce<\/strong>.<\/p>\n

\"\"<\/a><\/p>\n

Just a few of the ingredients used to prepare our Thai meal, certainly not all.<\/p>\n

\"\"<\/a><\/p>\n

The Shrimp and Coconut Milk Soup<\/strong> started with defrosting homemade Chicken Stock, Lemongrass, Kaffir Lime Leaves and Galangal.\u00a0 I’d made this soup many times before, but it’s been a few years.\u00a0 About 10 years ago, I was working as a Paralegal at a large law firm and we were having a fund raiser for the United Way<\/a>.\u00a0\u00a0To assist, I offered\u00a0to prepare ‘any dish’\u00a0for the highest bidder.\u00a0 One law partner paid $750 for a spicy Tom Kha Gai<\/a>, a variation of the pictured Soup.\u00a0 Thank God it turned out well and all proceeds went to the United Way.<\/p>\n

\"\"<\/a><\/p>\n

Wish we could show you the Shrimp in the “Shrimp” and Coconut Milk Soup.\u00a0 It’s too late now.<\/p>\n

\"\"<\/a><\/p>\n

The pots were filled and the Lemongrass Tea<\/strong>\u00a0chilled and ready for guests.\u00a0 I’m not sure if the above photo can be considered artsy or if it’s just plain blurry!?\u00a0 If just blurry, I apologize.\u00a0 Had I still been in the competition, I would’ve taken more photos. \ud83d\ude42<\/p>\n

I also prepared a Vegetable Curry <\/strong>with a bountiful\u00a0array of fresh Veggies (Baby Bok Choy, Sweet Pea Pods, Yams, Asparagus Tips, Carrots, Potatoes, Cauliflower, Zucchini and Broccoli).<\/p>\n

\"\"<\/a>\"\"<\/a>\"\"<\/a>\"\"<\/a><\/p>\n

And a Thai Peanut Noodle Salad<\/strong>, Saffron Rice<\/strong> and homemade Mango Lime Sherbet Ice Cream<\/strong>.\u00a0 I found the BEST Peanut Dressing recipe for the Noodle Salad and coincidentally it’s by another Foodbuzz Featured Publisher.\u00a0 It’s linked here<\/a> and\u00a0definitely a keeper.<\/p>\n

The Mango Lime Sherbet<\/strong>\u00a0turned out\u00a0too tart and I even added more sugar than the recipe called for.\u00a0 Although everyone claimed to love tart flavors, it was pushing it.\u00a0 My Dad took one bite and handed it back to me with a pucker on his face.<\/p>\n

Above is a\u00a0little sampling for the dog, just kidding — It’s what I had the next day, a Mini-Meal.\u00a0 For the Satay and Coconut Peanut Sauce, I used a recipe similar to the one linked here<\/a>.<\/p>\n
