A few months back, I entered the Tonnino Tuna Chef Challenge<\/a>\u00a0for which I created a recipe using Tonnino Tuna and a video preparing same.\u00a0 I\u00a0didn’t expect to win (and didn’t), since my first recipe<\/em> video<\/em> was fraught with technical errors, but\u00a0I did learn a lot, like not to\u00a0take longer to combine the recipe ingredients than the video is allowed to be.\u00a0 That’s pretty important!\u00a0\u00a0<\/p>\n

Aside from the video,\u00a0the recipe\u00a0turned out\u00a0damn good — And now that the competition is officially over, I’ve decided to publish my\u00a0Calypso Tuna Cakes<\/strong> recipe below.\u00a0 To find out more about the challenge, recipe\u00a0and video see here<\/a>.<\/p>\n

Regarding competitions, challenges and contests… It’s\u00a0not cool, right, nor appreciated if\/when entry deadlines are extended — It’s a little unfair, inequitable, unprofessional, misleading\u00a0and disrespectful to those who entered on-time or by\u00a0the competition’s posted deadline.\u00a0 The Tonnino Tuna Chef Challenge deadline was\u00a0extended twice.\u00a0 I didn’t like that and hope not to encounter\u00a0it\u00a0again.\u00a0 However, I am pleased to discover\u00a0Tonnino’s high quality Tuna.\u00a0 It’s\u00a0impressive, but not inexpensive.<\/p>\n

\"\"<\/a><\/p>\n

Calypso Tuna Cakes<\/strong><\/p>\n

1 (6.7 oz.) Jar of Tonnino Tuna Fillets with Jalapeno in Olive Oil (loosely chopped)<\/p>\n

1\/2 Cup Bread Crumbs (1\/4 Cup for Tuna Cake mixture + \u00bc Cup for Tuna Cake coating)<\/p>\n

1 Egg<\/p>\n

1 Tbsp. chopped Cilantro<\/p>\n

1 Tbsp. chopped Green Onions<\/p>\n

1 Tbsp. Lime Zest<\/p>\n

1\/3 Cup Corn (roasted and cut off cob)<\/p>\n

1\/3 Cup Red Bell Pepper (diced)<\/p>\n

1 Tsp. of Mayonnaise<\/p>\n

1\/4 Tsp. Cumin<\/p>\n

Olive Oil for baking sheet<\/p>\n

* A little reserved Jalapeno Olive Oil, if necessary to moisten Tuna Cake mixture (optional).<\/p>\n

Preheat oven (and a baking sheet) at 400\u00b0.<\/p>\n

Combine all ingredients reserving 1\/4 Cup of Bread Crumbs on a plate.\u00a0 Mix other ingredients together and form into (4 \u2013 6) Tuna Cakes depending on preferred size.\u00a0 Coat each Tuna Cake with the reserved Bread Crumbs.\u00a0 Add Olive Oil to the heated baking sheet, and then add the Tuna Cakes.\u00a0 Bake for 15 minutes turning\u00a0once halfway through.\u00a0 Remove from the oven, cool slightly and\u00a0dig into the Calypso —\u00a0YUM!<\/p>\n

The\u00a0Calypso Tuna Cake above was served with a\u00a0blend of Chipotle Peppers and Sour Cream, Pico De Gallo and Hava Chips.\u00a0 And they\u2019re named ‘Calypso’ for\u00a0their regional ingredients, vibrant colors and tasty flavors,\u00a0likened to\u00a0the\u00a0enlivening feeling of Calypso music.\u00a0 Finally, it just so happens that I’ve met John of Food Wishes<\/a>, the guy who actually won the Tonnino Tuna Chef Challenge<\/strong> and he’s a cool guy.\u00a0 Congratulations John<\/a>!<\/p>\n
