Have you\u00a0tried the Garlic Cheese Bread at Parkers’ Lighthouse<\/strong> yet?\u00a0 If you have and love it like I do, here’s a copycat recipe.\u00a0 Parkers’ Lighthouse is a\u00a0Waterfront Seafood Restaurant in Long Beach, across the Harbor from The Queen Mary.\u00a0 Once upon a time I\u00a0worked there as a waitress while in\u00a0college (CSULB).\u00a0 Everyone loved their famous Garlic Cheese Bread and it appears they still do.\u00a0 With a little help\u00a0from a former co-worker,\u00a0I provide this simple recipe that (to me) tastes\u00a0like Parkers’ Garlic Cheese Bread.\u00a0 It’s a unique combination that contains no Butter, but it works.<\/strong>\u00a0 Since I no longer live in Long Beach, this recipe occasionally comes in handy for a\u00a0nostalgic fix.\u00a0 What’s pictured here was cooked in the toaster oven, but the Garlic Cheese Bread is\u00a0terrific broiled in the oven.<\/p>\n

Parkers’ Lighthouse Garlic Cheese Bread (Copycat) Recipe<\/span><\/strong><\/p>\n

-Bread (French\u00a0or Sour Dough Roll, cut in half lengthwise)
\n-Mayonnaise
\n-Parmesan Cheese (Fresh Grated,\u00a0a generous ratio to\u00a0Mayo)
\n-Garlic Powder (A generous amount to taste)<\/strong><\/p>\n

Mix all ingredients together and spread liberally on\u00a0long split rolls.\u00a0 Broil in the oven until light\u00a0– golden brown.\u00a0 Be sure to keep an eye on the Bread.\u00a0\u00a0It doesn’t take long.\u00a0 I’ve burned way too many pieces in my life, HA.<\/strong><\/p>\n

FYI:\u00a0 The same Cheese combination and\u00a0Spinach is used to make Parkers’ Oysters Rockefeller, one of my favorite appetizers there.\u00a0 If you’re adventurous, give them a try too.\u00a0 They’re also broiled until golden brown, then served on a bed of Rock Salt.\u00a0 Enjoy!<\/p>\n
