768w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>Japanese Eggplant grew so well for us last year, but it was during a total kitchen remodel, thus we were unable to enjoy them &#8212; And this year it&#8217;s growing wonderfully for us again.\u00a0 Yay!<\/p>\n<p><a href=\"http:\/\/www.ineedtext.com\/FoodBlog\/wp-content\/uploads\/2018\/06\/20180624_141612.jpg\"><img 768w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>We are also having luck with Swiss Chard again this year.\u00a0 I LOVE it, since it can be eaten raw or cooked, like Spinach.\u00a0\u00a0We&#8217;ve also plucked out a few Beets, which I boiled for a Beet Salad with Olive Oil, Apple Cider Vinegar and Salt &amp; Pepper.\u00a0 Sadly, our Purple Cabbage plant is struggling beneath the towering Swiss Chard, Japanese Eggplant and Pickling Cucumbers.<\/p>\n<p><a href=\"http:\/\/www.ineedtext.com\/FoodBlog\/wp-content\/uploads\/2018\/06\/20180624_141752.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-52114\" 768w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p style=\"text-align: center;\">Soon to turn orange, Sweet Peppers are pictured above.\u00a0 We have yellow ones growing 768w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>And we just harvested twelve ears of Corn that sure looked beautiful on the outside, but were sadly chewy inside.\u00a0 We might have waited too long to pick them.\u00a0 Not sure.\u00a0 Instead, we plan to grow Autumn Corn next year.\u00a0 We like the fun of opening each husk to view the pretty, mystery colors inside.\u00a0 We can usually buy edible,\u00a0relatively inexpensive Corn in the store.<\/p>\n<p><a href=\"http:\/\/www.ineedtext.com\/FoodBlog\/wp-content\/uploads\/2018\/06\/20180609_112114.jpg\"><img decoding=\"async\" 768w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>Our four Tomato plants are a bit of a disappointment this year.\u00a0 We don&#8217;t have many Tomatoes and their skins are thick.\u00a0 All taste good inside, but are tough on the outside.\u00a0 I&#8217;ve been roasting them in the oven to easily remove their skins and use the insides in Vegetable and Pasta dishes.<\/p>\n<p><a href=\"http:\/\/www.ineedtext.com\/FoodBlog\/wp-content\/uploads\/2018\/06\/20180609_111832.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large href=\"http:\/\/www.ineedtext.com\/FoodBlog\/about\/\" target=\"_blank\" rel=\"noopener\">Matt<\/a> is.\u00a0 He&#8217;s the Pineapple King, as <a href=\"http:\/\/www.ineedtext.com\/FoodBlog\/grateful-grow-start-years-garden\/\" target=\"_blank\" rel=\"noopener\">previously reported<\/a>.\u00a0 We have several growing in pots and in a designated Pineapple Patch next to the Tomatoes.<\/p>\n<p><a href=\"http:\/\/www.ineedtext.com\/FoodBlog\/wp-content\/uploads\/2018\/06\/20180609_111648.jpg\"><img decoding=\"async\" loading=\"lazy\" be slowing down.\u00a0 They&#8217;ve been sweet to eat, once past the bush&#8217;s harsh thorns to pick &#8217;em.<\/p>\n<p><a 768w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>What to do with Pickling Cucumbers?\u00a0 Yes, I&#8217;ve made Pickles a few times, but they just keep growing.\u00a0 Tzatziki Sauce and Cucumber Salads are next.\u00a0 The plant is beautiful with yellow flowers.<a href=\"http:\/\/www.ineedtext.com\/FoodBlog\/wp-content\/uploads\/2018\/06\/20180615_152806-e1530393114914.jpg\"><img One Zucchini we&#8217;re growing is quite large.\u00a0 It appears to have doubled in size overnight.\u00a0 I want to pick it, but Matt wants to see how large it will get.\u00a0 We&#8217;re also growing Salad Greens, Rosemary, Thyme, Basil and Kale to eat, which are all generally doing well.<\/p>\n<p><a
