The Orange County Wine Society at the Fair.

July 19th, 2008 No comments

The Orange County Wine Society (OCWS) started with a group of independent Wine makers, but has grown and evolved to include those who simply love to drink it.  The OCWS functions to enhance the knowledge of Wine-making (viticulture or viniculture) and the appreciation of Wine.  They’re a fun group who voluntarily pour Award Winning Wines during the OC Fair.

This year $7.00 will get you a tasting of 3 Wines, plus the OCWS’s 2008 Wine Awards Book.  And $3.00 will pour you a tasting of 2 Wines.  TIP:  You can get Cheese, Grapes and Bread from the Italian Restaurant outside the Wine Courtyard, all are shown below.

More Than Fair Fare at the OC Fair.

July 18th, 2008 1 comment

Some food is great and some just novel experiments.  This day was a combination of both.  We started with Australian Battered Potatoes with Cheese Sauce and Ranch Dressing.  I had read that they’re loved by many, so had to give them a try — And we liked them too.  The batter was cooked perfectly, but they can get heavy after a couple.  I’d probably share them with a few people again.

These Smoked Pork Ribs had a generous amount of meat and flavor.  They were definitely more than fair fare at the Fair. 🙂

And on a different note, there was the Fried White Castle Burger, which I won’t be getting again.  My friend liked it, but it tasted way too greasy for me.  Granted we had already eaten the above, but overall I don’t see its value — But it was fun to try.

The following pictures respectively relate to the three above.

Duncan Hines Orange Supreme Cake Mix Review.

July 17th, 2008 No comments

Since I love everything Orange Flavored, I had to try it.  Here’s the naked Bundt Cake before a quick messy coat of Whipped Cream.  It was super moist, but I must admit that I added a 1/2 box of vanilla pudding mix to the mix.  I had an opened box and wanted to use it.  I’m not sure if it made a big difference or not, but the Cake was good.

oc-fair-2008-251.JPG     orange-cake-003.JPG

BTW, I previously tried the Pineapple Supreme Cake Mix and found it to be too sweet.  The Pineapple flavor was a bit imitation tasting.  I hope they rework that recipe.

Bountiful Home Grown Tomatoes.

July 16th, 2008 No comments

I’m lucky.  Four family members are growing Tomatoes this year and keep giving them to me.  This time I scored and broiled a batch in the oven, then peeled and chopped all to make a Sauce for use tomorrow.  With what?  You’ll see someday.

                 roasted-tomatoes-002.JPG       roasted-tomatoes-005.JPG

I added minced Garlic, Olive Oil & Salt and simmered for about 20 minutes.  This process makes a good, fresh tasting Sauce.  And if I have fresh herbs around, I’ll toss them in – Basil, Marjoram, Oregano, Rosemary, Parsley, or other.  🙂

With recent Tomato uncertainty, these gifts have been a commodity.

Diho Siam, I Am Thai or Chinese.

July 15th, 2008 1 comment

I’m happy it’s within walking distance, since it’s pretty good.  They serve a Thai and Chinese Menu, which is different.  I usually get the Thai, but will eventually get around to the Chinese.  This visit it was Chicken Satay, Thai Fried Rice with Pork, and Hot & Sour Coconut Soup with Shrimp (Tom Kha, here).  All were right on.

Baking Contests at the Orange County Fair.

July 13th, 2008 No comments

This year the cooking / baking contests are rotating, due to lack of refrigeration and cost associated with same.  It makes sense too, since the items are perishable and naturally breakdown.  Last year some entries looked terrible towards the later days of the Fair.  It was somewhat comical to look through the glass to see a shriveled up dessert and say to your friends — I can’t believe that won First Place – HA.

The Contest Categories on display this opening day appeared to be Fudge, Cakes, Scones, Biscuits and Breads.  Next year I’m in.  Registration begins in March 2009 — It’s the Home Arts Division.

Beef Bourguignon Today & Tomorrow For Lunch.

July 10th, 2008 No comments

Here’s ingredient-by-ingredient instructions and pictures to an easy Beef Bourguignon.  I’m happy to say that this one turned out great.  The meat was perfectly tender and the broth was flavorful.

To make the same, heat Olive Oil and Bacon Grease in a dutch oven, S & P some Beef cubes/chunks and quickly sear until all sides are brown, then remove and set aside.

kabobs-etc-004.JPG     searing-beef.JPG     kabobs-etc-010.JPG

Peel and chop Onion, Carrots and Potatoes.

kabobs-etc-005.JPG     kabobs-etc-006.JPG    kabobs-etc-007.JPG

Saute the Onion for about 5 minutes, then add the Carrots and Potatoes to brown.  When sufficiently brown, add minced Garlic and cook another minute — Then add Beef Stock and a generous amount of Red Wine.  And return the seared Beef to the pot.

onions.JPG     onion-carrots.JPG     kabobs-etc-014.JPG

kabobs-etc-017.JPG    wine-pour.JPG    kabobs-etc-019.JPG

Add Mushrooms, Thyme, a Bay Leaf and peeled chopped Tomatoes.  Cover and bake in the oven at 325° for 2 hours.  Stir once every 30 minutes or so.

kabobs-etc-020.JPG    kabobs-etc-021.JPG    kabobs-etc-023.JPG

After a couple hours all will be tender and tasty.  And most of the time it’s even better the next day.  See the notes and link below for more information.

kabobs-etc-022.JPG     kabobs-etc-026.JPG    kabobs-etc-036.JPG

NOTE 1:  Other vegetables can be substituted in this recipe.  My preference in BB is Parsnips, Carrots and Mushrooms, but use what’s on hand when I really want something.

NOTE 2:  To make a larger portion, simply increase the ingredients proportionally.

NOTE 3:  Use Top Round, Bottom Round, Chuck, or similar stewing meat that’s on sale.  It’ll be tender in this dish.

Experimenting with Scallops.

July 9th, 2008 1 comment

To enjoy variety and test what tastes best, I prepared 9 Scallops 3 different ways.  I seasoned four with S & P and seared them in a pan with a little oil, while the other 2/3 of the trio was broiling in the oven.  Thankfully the seared Scallops couldn’t have turned out better.  The cooking time was about 4 minutes.

doheney-beach-017.JPG

I prepared another three Scallops with a mixture of Mayonnaise, Sriracha Hot Chili Sauce, Lemon Juice and S & P — I topped them with the Sauce and sprinkled with Panko Breadcrumbs, then broiled them in the oven with the ones below.  The cooking time was about 5 minutes.

doheney-beach-014.JPG

I coated the remaining two Scallops with Ponzu Sauce and Lemon Zest.  They tasted okay, but looked extremely boring.  I won’t be repeating this 1/3 of the trio, but it was still fun to have the assortment and none were terrible.

doheney-beach-016-copy-copy.JPG

Overall, the seared Scallops were the best.  The Sriracha Scallops were good too, but mostly because they tasted similar to a Scallop Handroll at a Sushi Bar.  Next time I might just sear them and serve with a Sriracha Dipping Sauce on the side.

Wow, The Staples Center Dessert Cart is Impressive.

July 8th, 2008 1 comment

I recently went to a concert at the Staples Center in Los Angeles.  We were lucky to have a Suite, A-16 to be exact.  And this Dessert Cart appeared at our door.  It had quite the impressive selection.  My friends loved the Red Velvet Cake and the Brownie Bar.  I was eating a CPK Pizza at the time, so skipped it later wishing I got something.

Tortilla Flats in Odense, Denmark.

July 6th, 2008 2 comments

Tortilla Flats i Frederiksgade

My Aunt & Uncle opened up the first Mexican Restaurant in Denmark.  I traveled there and ate the best Guacamole I’ve ever had in my life.  My Uncle hesitantly gave me the recipe, but it just wasn’t the same — Plus I was missing one ingredient I’ve yet to locate, which obviously makes a difference.  I can’t tell you any more.  It’s a secret.  You’ll need to travel to Denmark.  If you do, please tell them their niece Shelly says HELLO.

After many years, my Uncle Bobby and Aunt Sus still run this restaurant with staff they treat as family.  And they’ve allowed a few franchises throughout other parts of Denmark.  Family or not, the food is excellent.  I can’t wait to get back there.

Tantalum Restaurant – Even the Leftovers are Beautiful.

July 4th, 2008 No comments

I recently ate at Tantalum Restaurant for dinner and I’ve been kicking myself everyday since.  Why?  Because I didn’t have my camera to capture all the amazing dishes we experienced.  I’m not doing this dish justice, but needed to show something to make myself feel better.

tantalum-003.JPG     tantalum-006.JPG    tantalum-012.JPG

The above is the only leftover — It’s Black Beer Braised Short Rib, with Root Vegetable Hash and Grilled Baby Bok Choy.  Otherwise we polished off the rest at the restaurant.

*  Petite Slider Trio – Kobe Beef & Maytag Bleu Cheese, Short Rib & Onion Jam, and PorkBelly & Arugula (3 mini specialty burgers)

*  Apple & Tofu Fritters with Caramelized Yali Pears, Kaffir Lime Aioli

*  Pan Roasted Organic Chicken Breast with Garlic Smash, Summer Beans and Shisito Pan Sauce

*  Fried Banana Bread Pudding with Dark Rum Caramel and Tahitian Vanilla Bean Ice Cream

All were impressively presented — Now you know why I’m kicking myself.  It’s a great place with unique food.  The entrance feels a bit like a pleasant walk down the yellow brick road, which leads to a magnificent Harbor View, and a very cool restaurant and cozy bar areas.

For the Long Beach old timers, it’s located where the former Houlihan’s used to be.  It’s a whole new place, although Tantalum’s been open for 3 years.  I highly recommend it for style and taste, but it’s not inexpensive.  You can learn more and view the menu easily below.

God Left Clues — The Wonderment of it All.

July 3rd, 2008 No comments

A friend sent this to me in an E-Mail — I’m not sure where it originated, but I found it very interesting.  I’ve always been amazed and thankful for the bountiful foods from the Earth.  I like the photography and information here.

tomato.jpg

A Tomato has four chambers and is red — The heart is red and has four chambers.  Research shows that Tomatoes are indeed pure heart and blood food.

grapes.jpg

Grapes hang in a cluster that has the shape of the heart.  Each Grape looks like a blood cell and research shows that Grapes are a profound heart and blood vitalizing food.

carrot.jpg

Sliced Carrots look much like an eye — The pupil, iris and radiating lines look just like the human eye.  And science shows that Carrots greatly enhance blood flow to the eyes.

walnut.jpg

A Walnut looks like a little brain, a left and right hemisphere, upper cerebrums and lower cerebellums.  Even the wrinkles or folds on the nut look like the neo-cortex. We now know that Walnuts help develop over 3 dozen neuron-transmitters for brain function.

beans.jpg

Kidney Beans actually heal and help maintain kidney function and look much like human kidneys.

celery.jpg

Celery, Bok Choy, Rhubarb and more look a lot like bones.  These foods specifically target bone strength.  Bones are 23% sodium and these foods are 23% sodium.  If you don’t have enough sodium in your diet, the body pulls it from the bones making them weak. These foods replenish the skeletal needs of the body.

citrus.jpg

Grapefruits, Oranges and other citrus fruits look very much like the mammary glands of the female and actually assist the health of the breasts and the movement of lymph in and out of the breasts.

potatoes.jpg

Sweet Potatoes look like the pancreas and actually balance the glycemic index of diabetics.

avocado.jpg

Eggplant, Avocados and Pears target the health and function of the womb and cervix of the female – They look much like these organs.  Research shows that when a woman eats 1 Avocado a week, it balances hormones, sheds unwanted birth weight and prevents cervical cancers.  And it takes exactly 9 months to grow an Avocado from blossom to ripened fruit.  There are over 14,000 photolytic chemical constituents of nutrition in each one of these foods.  Modern science has only studied and named about 141 of them.

fig.jpg

Figs are full of seeds and hang in twos when they grow.  Figs increase the motility of male sperm and increase the numbers of sperm as well as help to overcome male sterility.

onions.jpg

Onions look like body cells.  Research shows that Onions help clear waste materials from the body cells.  They even produce tears which wash the epithelial layers of the eyes, and they’re even shaped like tears.

olives.jpg

Olives assist with the health and function of the ovaries.

NOTE:  The above information has not been verified for accuracy.  It has also been modified for grammatical accuracy and readability.  I apologize that I wasn’t able to correct the font variation and some formatting.

My Grandpa, Vaughn Moomey passed away this week at the age of 90.  We are going to miss him so much, but we’re also content that he is in a better place with the Lord.

For many years he worked hard as a Butcher for Von’s Grocers.  I remember having long talks about the various cuts of Beef — It’s a lot more complicated than I imagined.  He was a very gentle, patient and loving man.

And he still looked handsome at 90.  We love you Grandpa, Dad and PaPa.  Thanks for being such a Great Man!

Last Lunch at MoFo’s Orange County Office.

Morrison & Foerster, a well known international law firm just closed its Orange County office in Irvine — I once worked there as a Paralegal.  Last week I returned to enjoy one last lunch there with former co-workers and friends.  It appeared to be a reunion of twenty years of legal services.

Steven Woo, a friend in Washington, DC often goes for 40 mile bike rides, then stops to treat himself to fresh Blue Crabs on the waterfront.  It’s a great way to spend a Summer day.  Here’s the prelude and aftermath he provided.

dc-blue-crabs-ii.JPG

He ate 4 large and 4 extra large Blue Crabs for $15.00 — Sounds like a good deal.

And yesterday he went for Bistecca alla Fiorentina.  He says the traditional cut is a T-Bone, but his DC version was a 1 kg. Rib Eye.  It looks really good.
